Premier Classique (Formerly Montrachet) - For both Red and White Wines. Ferments to total dryness. Excellent in Chardonnay, Merlot, or Cab's. Tolerates higher SO2 levels. Alcohol tolerance to 15%.  Datasheet !


Premier Rouge (Formerly Pasteur Red) - A strong fermenter encourages development of varietal intensity and complexity, producing full-bodied reds that age well. It is our most successful red wine yeast, particularly for Cabernet-type wines, and other flavorful reds such as Rhone varieties.  Alcohol tolerance to 15%.  Datasheet !

Premier Cuvee - Red Star Premier Cuvée, a strain of Saccharomyces bayanus from a French wine yeast, is a special isolate of Red Star Yeast & Products. This yeast has good tolerance to ethanol and free sulfur dioxide, and ferments to dryness. Premier Cuvée is noted as a very low producer of foam, urea, and fusel oils. It is recommended for reds, whites and especially champagne. This yeast is reported to perform well restarting stuck fermentations. Alcohol tolerance: 14-16%Datasheet !

Cote des Blancs For White Wine. Slow fermenter, builds flavor and aroma.  Côte des Blancs is also known as Epernay II. It is recommended for Chardonnay, Riesling, mead and cider, as well as fruit wines, particularly apple. it imparts a fruity aroma in both red and white wines. A slow fermenter that works best between 50 and 80 degrees. This strain will may not ferment to dryness at the low end of the temperature range, leaving residual sugar and possibly resulting in a sweeter wine. Alcohol tolerance: 12-14%Datasheet !

Premier Blanc (Formerly Pasteur Champagne) (Davis 595), A strain of Saccharomyces bayanus, ed Star Premier Blanc (formerly known as "Pasteur Champagne") Wine Yeast is a strong fermenter with high alcohol tolerance. Ferments musts and fruit juices to dryness. Good for ethanol and sulfur dioxide tolerance, this strain has a fairly neutral flavor. It's recommended for white wines and fruit juices, yet despite its former name, is not recommended for sparkling wines and champagne. Can also be useful for restarting stuck fermentations. Because of its ability to release volatile precursor from the must, it provides tropical and citrusy (passionfruit, grapefruit) flavors and aroma to the wines.

This yeast is adapted for neutral grapes needing an aromatic enhancement such as Chardonnay or Grenache. But it’s also a great choice for aromatic varieties rich in thiols – Sauvignon blanc, Colombard, Syrah rosé – and terpenes – Pinot gris, Muscat.  Alcohol tolerance up to 15%
