Pasteur Blanc (Formerly Pasteur Champagne) (Davis 595), A strain of Saccharomyces bayanus, ed Star Premier Blanc (formerly known as "Pasteur Champagne") Wine Yeast is a strong fermenter with high alcohol tolerance. Ferments musts and fruit juices to dryness. Good for ethanol and sulfur dioxide tolerance, this strain has a fairly neutral flavor. It's recommended for white wines and fruit juices, yet despite its former name, is not recommended for sparkling wines and champagne. Can also be useful for restarting stuck fermentations..
