More powerful and less expensive than an Enolmatic !

No Lifting !!!

Use your Enolmatic or Vacuum Pump to transfer wine from/to any vessel.   Here we're racking from the 54 Liter Demijohn (in the back) to the front 6 gal. carboy.  

The pump evacuates oxygen from your barrel/carboy then gently pulls wine from another vessel.

Use to top up barrels, rack, transfer and of course bottle your wine.

Picture shows an added Valve for regulating pressure.  

The unit comes with a "T" connection where we've added a small valve that allows you to finely tune the amount of vacuum.  

Carboy Adapter.  

Use this to seal all standard carboys.  Demijohns need a larger adapter (see below).    Depending on your pump can fill a 5-6 gallon carboy in a couple of minutes.

Wine never touches oxygen nor does it get beat up by a mechanical impeller pump.

Demi-john Adapter

Degassing a Carboy - Takes only a few minutes.  Carboys need to be topped up (as they should be anyway) to prevent an "implosion".  The mass of wine strengthens the carboy.  Never pull a strong Vacuum on an empty carboy.

Degas adapter (We sell them or build you own - Use #7 stopper and 3/8" ID acrylic racking tube. A  #7 stopper is large enough to keep from being pulled into the carboy during vacuum)

Racking to a VC Tank

Small Barrel adapter used to rack into a 300 liter VC tank for blending prior to bottling.  

We first tried using the Enolmatic with a few problems.  The Enolmatic has too small a pump to efficiently evacuate the large tank.  After 30 minutes we had a small stream of wine going to the tank.  

Then we hooked up the small 1/6 hp (2CFM) vacuum pump and immediately sucked the lid of the VC tank to the bottom.  Over pressuring the lid's bladder and dialing down the vacuum solved this problem.  Filled a 300 Liter VC tank in a little over 12 minutes.

Racking into a 120 Liter Barrel.  

Use the 2CFM or 4CFM vacuum pump to fill or top off barrels.  Very fast, seals without a mess, and just a pleasure to use.

In our barrel room it's hard to see as barrels fill.  We often over fill and spill.  With the Vacuum pump as soon as wine is visible coming through the second tube your barrel is full.  Break the vacuum and flow immediately stops.

 

Inexpensive, no mess, vacuum bottle filler !!!

Always in pursuit of elegant cost effective solutions, we came up with a couple inexpensive ideas for filling bottles with your vacuum pump.

 

First we took a standard 2 hole drilled rubber stopper, put a 1/8" elbow and "T" and created a flow control bottle filler.  Like the Enolmatic it evacuates oxygen from the bottle before gently filling from any vessel.

Complete with a precision valve (ie. your  thumb).  Simply connect the "T" to the vacuum line and the elbow to the hose to your wine.

Turn on the vacuum, adjust the fill rate with the valve on your vacuum.  We were able to fill a 750ml in under a minute.

To fill just put your thumb on the open end of the "T".  This will create a vacuum and fill your bottle.  Once you've reached the appropriate fill level just remove your thumb from the "T" and break the vacuum.  I was surprised how easy it was to hit a perfect fill level every time.

I sat a case of empty bottles on the counter and moved the stopper from one to the other in a few minutes.

Gravity Feed Bottle Filler

A more elegant and slightly more expensive option is to connect the Buon Vino gravity filler to the vacuum.  We found this filled bottles considerably faster and the fill level adjustment provided more consistent fills.  We were able to fill a bottle in around 10 sec's.

Simply connect the top "overflow" tube to the vacuum line.  The side tube goes to your wine.
